if the plural of man is men, and the plural of woman is women, why isn't the plural of human humen?

Also here's an intrusive thought I had last night:

Ya know how bullfrogs have those air sacks in their throats? That they fill up with air to make weird little frog noises? What would happen if you stabbed the air sac with an exacto knife or something right when it was inflated?

but um they would probably fly backwards and emit a fweeeeee sort of noise like a deflating balloon

I didn't say I wanted to hurt the froggy! I just want to know what would happen... Most likely a lot of blood and an asphyxiated frog.
