I’m rereading Book 3 right now, and here’s a few I came across (for the second time):

Hermione xD 

Professor Lupin smiled at the look of indignation on every face.  “Don’t worry. I’ll speak to Professor Snape. You don’t have to do the essay.” “Oh no,” said Hermione, looking very disappointed. “I’ve already finished it!”
Fred and George:
Percy, however, held out his hand solemnly as though he and Harry had never met and said, “Harry. How nice to see you.”
“Hello, Percy,” said Harry, trying not to laugh.
“I hope you’re well?” said Percy pompously, shaking hands. It was rather like being introduced to the mayor.
“Very well, thanks —”
“Harry!” said Fred, elbowing Percy out of the way and bowing deeply. “Simply splendid to see you, old boy —”
“Marvelous,” said George, pushing Fred aside and seizing Harry’s hand in turn. “Absolutely spiffing.”
Percy scowled.
“That’s enough, now,” said Mrs. Weasley.
“Mum!” said Fred as though he’d only just spotted her and seizing her hand too. “How really corking to see you —”
“I said, that’s enough,” said Mrs. Weasley, depositing her shopping in an empty chair.
 “— and we couldn’t help noticing a drawer in one of his filing cabinets marked Confiscated and Highly Dangerous.”-Fred

"Yeah, Perce, someone might slip dragon dung in again, eh?" said Fred.

"Thst was a fertleizer sample from (insert a country name here- I'm paraphrazing right now)!" Said Percy, his ears red. "It was nothing personal!"

"It was," george whispered to Harry, "We sent it."

Oh yes. I think sometimes people get so wrapped up in how serious (no pun intended) some parts of the book are that we forget gems like these. A personal favorite:

"Yes sir."

"There's no need to call me sir, professor." The words had escaped him before he knew what he was saying.
