The first one stinks, let's be honest. The second and 3,4,5,6,7,8,9,10,11 are great.

So would you recommend starting at the second, or just enduring the first and getting to the good stuff after?

I'm a failure at life. I still haven't read ten and eleven. But I've been reading the series since maybe the third or fourth grade. I have up to nine in hardcover, and the original covers before the movie. Speaking of movie, the second movie is coming out in the summer. 

I will see it, swallow my pride, and think of it as a parallel universe, but there is NO WAY that lady can ever be Hiccup's mom.

We would start probably at the second to get into it, then do a little of the first and continue on from there.
